Recipe: Anzac cookies

Prep and cooking time: 35 mins

Serves: 4

Ingredients

  • 1 large ripe banana, mashed
  • 160g rolled oats or gluten free oats
  • 60g desiccated coconut
  • 60g ground almonds
  • 5 tbsp coconut oil
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tbsp water
  • ¼ tsp baking soda

Method

  1. Preheat the oven to 180°C/160°C fan.
  2. In a large mixing bowl add the banana, oats, coconut, ground almonds and a pinch of salt.
  3. Add the coconut oil, vanilla, water and baking soda.
  4. Place baking paper on a baking tray and form the cookies into 16 golf ball sized balls and flatten lightly.
  5. Pop the baking tray in the oven and bake for 30mins. Allow to cool on the baking tray before eating or they will break apart.

The fobnobs recipe is almost identical and rewritten for Americans. You could just cut out the chocolate to get Anzac cookies.

I’ve made 12 out of the recipe, so each cookie is 2/3 of a carb portion!

I don’t eat nuts or coconut. Is there anything I could use as a replacement for the almonds and coconut? I have been searching for a low sugar cookie recipe and thought this would be great.

Hi Sharon, thanks for your comment. You could try using this ingredient list instead to avoid the almonds and coconut:

  • 1 large ripe banana, mashed
  • 200g rolled oats or gluten free oats
  • 1 egg
  • 5 tbsp coconut oil
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tbsp water
  • ¼ tsp baking soda
